It was my child’s turn to take cup cakes to school on Friday, which meant it was up to moi to produce the goods.
I’d had one of those weeks jam-packed full of needy (teething!) kids, ridiculously tight deadlines and simply not enough sleep to keep me sane. I decided to go for the quick-fix option: Ina Paarman’s ‘instant’ cupcake mix (which is sold in a box as ‘Vanilla Cake’ mix, for about R29). I also chose to use her ‘ready-made’ (just add butter) icing kit (R19).
I’m sooo super glad I did!
Not only were the cupcakes flop proof, the icing was delicious (not too sweet) and really easy to apply.
The best part?
My lovely (long-suffering!) husband made them for me. Howzat for a treat?
Proof that Ina P is a legend in her own right (and my Mr Big is mighty marvellous).
